All you need to do is blend the sauce ingredients, and assemble the dish with microwave rice, veggies, salmon, pour the sauce over and cook for 20 minutes. Its so easy and delicious and you can swap the salmon out for any protein of your choice.

INGREDIENTS:

  • 4 portions of salmon
  • 1 can of coconut milk
  • 2 heaped teaspoons green curry paste
  • 1 handful of coriander
  • ½ lime juiced
  • 250g microwave brown rice
  • ½ red capsicum
  • 1 carrot
  • 1 broccolini bunch
  • ¼ cup chopped spring onions
  • 1 chilli finely sliced
  • 1 lime finely sliced

METHOD:

  1. Preheat oven to 200 degrees
