Air Fryer Gnocchi

If you haven't tried gnocchi in the air fryer yet, this is where you start. Crispy on the outside, soft in the middle and coated in a creamy feta sauce - it's simple, seasonal and seriously good.
Serves 2
Ingredients:
- 100g feta
- 1 cup uncooked gnocchi
- 1 cup broccoli florets
- 3 rashers short cut bacon, chopped
- ½ zucchini, chopped
- ½ red onion, diced
- 2 cloves garlic, roughly chopped
- ½ cup chicken stock
- Cracked black pepper
- Spring onions, sliced, to serve
- Parmesan, to serve
Method:
- In an unlined air fryer basket or tray, place the feta in the centre. Surround it with the gnocchi, broccoli, bacon, zucchini, red onion, and garlic.
- Pour over the chicken stock and season generously with cracked black pepper.
- Air fry for 15 minutes at 180°C, or until the gnocchi is tender, the bacon is golden, and the vegetables are cooked through.
- Remove and stir everything together until the feta turns into a creamy sauce coating the gnocchi.
- Top with spring onions and plenty of parmesan, then serve immediately.
