Sesame choy sum with green beans and seared beef

Ingredients

  • 1 bunch choy sum
  • 300g stringless beans
  • 1x 400g thick cut sirloin steak
  • 1 tablespoon mirin
  • Half a teaspoon salt
  • 4 tablespoons sesame seeds, lightly toasted
  • 1 tablespoon caster sugar
  • 1 tablespoon soy sauce
  • 2 tablespoons dashi (bonito soup)
  • Salt and pepper to taste

Directions

  1. Grind sesame seeds and mix with sugar, soy and dashi.
  2. Set aside
  3. In a large saucepan bring 3l of water to the boil
  4. Remove leaves from washed choy sum and set aside
  5. Cut stems into 2 cm pieces
  6. Trim beans
  7. Add cut stems and beans to rapid boiling water and blanch covered for 2 minutes
  8. Add leaves and blanch just until wilted
  9. Shock in iced water and drain well
  10. Mix blanched greens with mirin and salt
  11. Divide blanched greens among four plates
  12. Season steak with salt and pepper and sear for 5 minutes
  13. Turn steak and sear the other side for 3 minutes
  14. Rest steak for 5 minutes before thinly slicing meat
  15. Arrange slices over greens and spoon sesame dressing over greens and meat
  16. Serves four as a lunch or starter

Cooking time: 10 minutes
