Sesame choy sum with green beans and seared beef

Ingredients
- 1 bunch choy sum
- 300g stringless beans
- 1x 400g thick cut sirloin steak
- 1 tablespoon mirin
- Half a teaspoon salt
- 4 tablespoons sesame seeds, lightly toasted
- 1 tablespoon caster sugar
- 1 tablespoon soy sauce
- 2 tablespoons dashi (bonito soup)
- Salt and pepper to taste
Directions
- Grind sesame seeds and mix with sugar, soy and dashi.
- Set aside
- In a large saucepan bring 3l of water to the boil
- Remove leaves from washed choy sum and set aside
- Cut stems into 2 cm pieces
- Trim beans
- Add cut stems and beans to rapid boiling water and blanch covered for 2 minutes
- Add leaves and blanch just until wilted
- Shock in iced water and drain well
- Mix blanched greens with mirin and salt
- Divide blanched greens among four plates
- Season steak with salt and pepper and sear for 5 minutes
- Turn steak and sear the other side for 3 minutes
- Rest steak for 5 minutes before thinly slicing meat
- Arrange slices over greens and spoon sesame dressing over greens and meat
- Serves four as a lunch or starter
