Char Sui Pork

Ingredients
- 4 tablespoons honey
- 4 tablespoons soy sauce
- 2 tablespoons chinese shaoxing rice wine
- 2 teaspoons garlic, finely chopped
- 3 teaspoons ginger, grated
- 1 teaspoon five spice, ground
- 1.5 kg pork shoulder
Directions
- Heat honey and soy in a small saucepan
- Bring to the boil
- Remove from heat and stir in remaining ingredients
- Set aside to cool
- Marinate pork, preferably overnight, turning twice
- Preheat oven to 170 degrees
- Place marinated pork on a roasting rack, over a backing tray half filled with water
- Reserve marinade
- Cook pork for 2 hours, turning every half hour, until fine skewer inserted in thickest part offers no resistance
- In a small saucepan reduce marinade to a thick glace
- Brush cooked pork with glaze
- Rest pork for 10 minutes before slicing
