Char Sui Pork

Ingredients

  • 4 tablespoons honey
  • 4 tablespoons soy sauce
  • 2 tablespoons chinese shaoxing rice wine
  • 2 teaspoons garlic, finely chopped
  • 3 teaspoons ginger, grated
  • 1 teaspoon five spice, ground
  • 1.5 kg pork shoulder

Directions

  1. Heat honey and soy in a small saucepan
  2. Bring to the boil
  3. Remove from heat and stir in remaining ingredients
  4. Set aside to cool
  5. Marinate pork, preferably overnight, turning twice
  6. Preheat oven to 170 degrees
  7. Place marinated pork on a roasting rack, over a backing tray half filled with water
  8. Reserve marinade
  9. Cook pork for 2 hours, turning every half hour, until fine skewer inserted in thickest part offers no resistance
  10. In a small saucepan reduce marinade to a thick glace
  11. Brush cooked pork with glaze
  12. Rest pork for 10 minutes before slicing

Preparation Time: 20 minutes
Cooking Time: 30 minutes
